2-Acetylthiazole is a colorless to light yellow liquid, which exists in beef juice, potatoes, pig liver, and white bread. It can also be made from 2-bromothiazole, which can be treated with butyl lithium, reacted with acetaldehyde, and finally oxidized. It has the flavor of fried corn, fried chestnuts, roasted oatmeal, roast meat, nuts, and bread, and is used to prepare oatmeal, fried corn, bread, and meat essence. The recommended dosage is about 0.2 ~ 1.4mg/kg in the final flavored food.
